A new bidesmosidic pentacyclic triterpenoid saponin, oleragenoside, was isolated from Spinacia oleracea L. plants. Its novel aglycone representing 2-hydroxy-gypsogenin, was named oleragenin. The structure was established on the basis of spectral data as oleragenin-28-O-β-D-glucopyranoside-3-β-O-D-glucuronopyranoside.
